Honey Chilli Mushroom

Ingredients:
  • 1 pound button mushrooms, cleaned and halved
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon ginger-garlic paste
  • Salt to taste
  • Oil for deep frying

For the Sauce:

  • 2 tablespoons oil
  • 2 cloves of garlic, minced
  • 1 tablespoon finely chopped ginger
  • 2 green chilies, finely chopped
  • 1/4 cup Nature’s Nectar honey
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato ketchup
  • 1 tablespoon chili sauce
  • 1 tablespoon vinegar
  • 1/2 teaspoon red chili flakes (adjust to taste)
  • 1/4 cup water
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Spring onions, finely chopped (for garnish)

Instructions:

  1. Combine all-purpose flour, cornflour, ginger-garlic paste, and salt in a mixing bowl. To get a smooth batter, add a little water. The sauce must be thick enough to coat the mushrooms.
  2. In a pan or wok, heat the oil for deep frying. Dip each mushroom piece into the batter, coating it thoroughly. Drop them into the heated oil with caution and cook until golden brown and crispy. Using a slotted spoon, remove them and set them on a paper towel to drain excess oil.
  3. Heat 2 tablespoons oil in a separate pan. Mix in the minced garlic, ginger, and green chilies. Cook for a minute, or until aromatic.
  4. To the pan, combine Nature’s Nectar honey, soy sauce, tomato ketchup, chilli sauce, vinegar, red chilli flakes, and water. Stir thoroughly and bring the sauce to a boil.
  5. In a small bowl, combine cornflour and water until smooth. Pour the cornflour mixture into the simmering sauce, stirring constantly. Allow the sauce to thicken to a sticky consistency.
  6. Toss the sautéed mushrooms in the sauce until completely coated. Cook for another 2-3 minutes to enable the flavours to merge.
  7. Remove the honey chilli mushrooms from the heat and garnish with finely chopped spring onions.
